Huevos Rancheros Recipe

Huevos Rancheros is a classic Mexican breakfast, translating to “ranch eggs”. It’s made up of fried eggs served on lightly fried tortillas - also known as tostadas - with fresh salsa.

This Mexican inspired dish is perfect for weekend brunch or light lunch when you’ve got a little bit more time to whip up something tasty. It comes together in less than 30 minutes and only uses a handful of ingredients. And it’s vegetarian friendly, so great for anyone looking to cut down on their meat intake.

We’ve added some tasty extras to our Huevos Rancheros recipe - combining the classic Mexican flavours with homemade tomato salsa, chilli and lime black beans, green chilli, and creamy avocado. So, even the most delicate palates can still enjoy them.
