Healthy on the road meals and snacks

Looking for some easy to prep healthy meals to take with you whilst on the road? Try these recipes you can make ahead of time so you can keep on track whilst being out and about.

Recipe 1 - Breakfast Scramble

INGREDIENTS

  • 2 chopped chicken sausages
  • 2 chopped tomatoes
  • 3 eggs
  • Handful of spinach

METHOD

  1. Cook sausages and tomatoes in a hot pan
  2. Crack 3 eggs into pan and scramble
  3. Add spinach and season with salt and pepper before serving

Recipe 2 - Harissa Chicken and Quinoa Salad

INGREDIENTS

  • Mixed leaf salad
  • Quinoa
  • Sliced peppers
  • Chicken

METHOD

  1. Mix together the salad, quinoa and peppers in a bowl.
  2. Cut chicken into strips and cook until browned
  3. Add chicken to the bowl and mix together.
