We’re back with another protein-packed power bowl to add to your weekly meal prep rotation.

With 51g of protein per bowl, our Peanut Chicken Power Bowl recipe is ideal for anyone who is training regularly or trying to build muscle.

Peanut Chicken Power Bowl

Power bowls are simple. Throw together a combination of your favourite protein, carbs, and vegetables with a variety of spices and flavours to get a delicious, healthy, and high-protein medley.

For this recipe, we've combined wholegrain rice with Cajun spiced chicken and loaded it with crunchy vegetables such as carrot, cabbage, and edamame. We've topped it off with a sticky and sweet satay inspired dressing.

Ingredients

To make the power bowl you will need:

  • 250g chicken breast, diced
  • 1 tbsp Cajun seasoning
  • 1 carrot, grated
  • 4 tbsp edamame beans
  • 4 tbsp red cabbage, shredded
  • 1/4 cucumber, sliced
  • 1 bag of microwavable wholegrain rice
  • 1/2 lime, cut into wedges
  • Low-calorie oil spray
  • Fresh coriander, to serve

To make the dressing you will need:

  • 2 tbsp soy sauce
  • 1 tbsp lime juice, freshly squeezed
  • 1/2 tbsp rice vinegar
  • 1 tsp honey
  • 1 garlic clove, crushed
  • 1/2 tbsp sesame oil
  • 20g smooth peanut butter, softened

Method:

  1. Season chicken with Cajun spices and spray generously with low calorie oil spray, mix well.
  2. Heat a frying pan with low-calorie oil spray and add chicken to the pan. Fry for 8-10 minutes turning regularly until cooked through.
  3. Meanwhile, whisk together the ingredients for the dressing, adding 1 tsp of water at a time until desired consistency forms. Then chill dressing in the fridge until ready to serve.
  4. Add carrot, edamame beans, red cabbage, cucumber, and rice to a food prep container or serving bowl and top with the cooked chicken.
  5. Sprinkle over fresh coriander and with a wedge of lime and drizzle with peanut dressing

Top Tip: If you're making meal prep, keep your dressing in a separate container to your power bowl to keep your veggies fresh and crunchy. Then drizzle over when you're ready to eat,
